Place a smaller bowl inside to hold the parchment in place while assembling. Using a wide-rimmed glass, layer slices of Genoa salami over the rim, folding each piece slightly and overlapping them as you go. Continue until the rim is fully covered. Carefully flip the glass over to release a perfectly shaped salami rose. Repeat this process with the pepperoni and capicolla. Each 4 oz portion of meat will yield approximately two roses. Arrange four slices of provolone, overlapping them halfway. Slice down the center to create two sets of half-moon pieces.
